The splendid “Castello della Sala”, the prestigious Umbrian estate of the Antinori Family, rises on a promontory of the Umbro Appennine. A place of unbelievable beauty and charm. For decades, it is the heart of the production of the best white wines with Antinori plates.
In the spring of 1979, Renzo Cotarella, a young agronomist who will produce the wines of the estate in less than ten years, arrived at the Castle. In those years, he soon began to work on an ambitious varietal regeneration project. This was aimed at obtaining white wines with a greater personality than those produced in the Orvieto Classico area. He worked on chardonnay and he deepened his knowledge of Grechetto.
The Cervaro della Sala was born in 1985, one of the most famous and appreciated Italian wines in the world.

Vintage 2018
In general the 2018 vintage was, in general, a fresh one distinguished by occasional light precipitation capable of correctly favoring the cycle of the vine.
On the month of January was mild and with little rainfall, while the end of February and the beginning of March were marked by lower than average temperatures and snow followed by above average rains which contributed to re-balancing the supply of ground water in the soil.
The regular rainfall of late spring slightly slowed the phase of the growth of the berries.
The climate, warm on the whole, was characterized from July on and during the entire month of August by excellent temperature.
For the Cervaro della Sala the picking of the Chardonnay began with healthy grapes during the last ten days of August.
Vinification
Were constructed to take fulladvantage of the principle of gravityand assists the movement of the grapesand their maceration without the crop being pumped or subjected to mechanical movement of the mass. The picking of the grapes takes place during the veryfirst hours of the dayso that the cellars receive fruit in pristine condition, without the influence of the higherand warmer temperatures of the day.
The must is treated to a maceration on its skins for four hoursatatemperature of 50 °Fahrenheit (10 °Centigrade)and subsequentlyfalls into stainless steel fermentation tanks where it loses its impurities before going into small oak barrels. Here it fullyfermentsand then is put through a complete malolactic fermentation. After five months of aging, the Chardonnayis usuallyreadyto be blended and to go back into stainless steel, where it isassembled with the Grechetto, which has been fermented, separately, on its own, without contact with wood. The Cervaro della Sala is then aged in bottle forvarious months in the Castello della Sala cellars before being placed on the market
Tasting Notes
The 2018 Cervaro della Salaisaluminous straw yellow in color streaked with occasional greenish highlights. The nose shows light toasted notesaccompanied byaromas of citrus fruit, tropical fruit,and hints of butter. Is notably savory and fresh at the palate, con characteristics of chamomile, white fruit,and flintalong with a pleasurable persistence and tasting depth.
