The Champagne Cuvée Kimmeridgienne vintage 2011 Jacques Robin is one of the imported Champagnes that the Sommeliers of Fons Vinum have selected for their clients.

A bit of history

“Our estate was founded by our parents Annie and Jacques in 1973. A family-owned plot recognized in AOC allowed them to plant their first parcel (50 ares).
Year after year, they expanded their vineyard.
Then, in 1985, they decided to produce their own champagne.
Their efforts were rewarded in 1988, earning a medal at the departmental competition fair in Bar sur Seine.
My brother and I (Aude), nurtured by the same passion, decided to join them after our viticultural studies in 1998.

Today we are all united around the same motto: “Today’s quality guarantees tomorrow’s work”

THE KIMMERIDGE

Kimmeridge is a subsoil matrix from the Jurassic era formed by the compaction on the seabed of calcareous oyster shells, calcium carbonate that has the capacity to have a direct effect on agricultural cultivation, and in particular on vineyards, even on the physical qualities of the grapes and the resulting wine.

The exceptional nature of Kimmeridge lies in its ability to bear traces of the ancient life of those marine organisms that deposited on the seabed over millions of years. The grapes tend to maintain high acidity values at full maturity, particularly when the Calcium value is high and the Potassium low. The skins of grapes (white and red) grown on Kimmeridge soils are thicker and more resistant. Soil drainage finds optimal conditions, with no stagnant moisture or mold; on the contrary, the subsoil water reserves are remarkable. When tasting a wine from Kimmeridge, it’s difficult to distinguish a Sauvignon from a Chardonnay in a blind tasting! Some say that in France wines should not smell of the grape variety but of the place. In Chablis, a Chablis should not speak (only) of Chardonnay but of Chablis; one goes beyond the varietal peculiarities of the grape because there is a stronger and more important factor that must emerge: the terroir.

Champagne JACQUES ROBIN Champagne Cuvée Kimmeridgienne 2011

A beautiful straw yellow color with golden reflections adorns this wine. A lovely effervescence of fine bubbles weaves a pleasant creamy crown.

On the nose it is airy, elegant and rich in finesse with notes of hazelnuts, praline, acacia honey, vanilla, dried apricots, chocolate and blond tobacco.

The elegance continues on the palate with a beautiful freshness of lemon zest and white fruits. The bubbles are caressing and accompany the mineral finish of this gourmet champagne.

To be enjoyed with sea bream tartare or goose foie gras.
