Located at the northern gateway to Burgundy, between Paris and Beaune, the Domaine Mosnier estate lies in the heart of Chablis. Its typical terroir and climates produce unique and incomparable dry white wines.
The characteristic minerality of Chablis wines comes from Chardonnay, which draws its strength and delicate freshness from Kimmeridgian soil. Formed 70 million years ago when the sea receded, it left behind alternating layers of limestone and clay with fossilized marine organisms.
Since 1893, driven by the same desire and conviction for excellence, successive generations of winemakers have dedicated themselves with strength and determination to the vines, producing wines in the pure tradition and authenticity of Burgundy and Chablis.
The new generation at Domaine Mosnier, led by Stéphanie, blends tradition and modernity in production. Today, the estate manages nearly 19 hectares of vineyards across 3 appellations and various terroirs: 4 ha of Petit Chablis, 13.30 ha of Chablis, and 1.60 ha of Premier Cru
The estate practices sustainable viticulture with HVE 3 certification: minimal use of plant protection products thanks to soil cultivation and grassing between rows. The vineyard is more natural, a habitat for numerous insects and a sign of life and biodiversity.
CHABLIS VIEILLES VIGNES
DOMAINE SYLVAIN MOSNIER Chablis Vieilles Vignes 2023. In keeping with pure tradition, the estate’s Chablis wines are vinified in stainless steel tanks to enhance the freshest fruity, floral, and vegetal varietal notes—and above all, the purity of that distinct mineral accent reminiscent of the flint typical of clay-limestone soils.
Immediately after harvest, the grapes undergo soft pressing and the must flows by gravity into stainless steel tanks, allowing the grapes to preserve their original richness to be rediscovered in the bottle.
Vieilles Vignes means Old Vines. To use this designation on the label, the grapes must come from vineyards at least 25 years old.
Sylvain Mosnier’s Chablis Vieilles Vignes is grown on 14 hectares of clay and marl soil; the youngest vines are over 50 years old.

- Color: a beautiful straw yellow with distinct greenish highlights.
- Nose: very fresh, lively, and mineral; featuring flint, apple, and pineapple, alongside white plum and grapefruit.
- Palate: the aromas maintain their freshness for a long time. A long, joyful persistence leading to a smooth and serene depth. Very fresh and sometimes sharp in its early years, Chablis reaches perfect balance after a modest evolution.
