The Winery

A historic winery in Castiglione Falletto, the Paolo Scavino estate was founded in 1921 by Lorenzo Scavino and his son Paolo. Today, it is led by the fourth generation of the family.

The estate continues along its established path, driven by constant passion, unwavering dedication, and an unconditional love for its land and vineyards.
With nearly a century of experience, the Paolo Scavino winery focuses primarily on Nebbiolo—a grape variety interpreted and showcased to express the subtle nuances of every single *cru*.
However, Dolcetto and Barbera are also cultivated alongside Nebbiolo.
From its 23 hectares of estate-owned vineyards, the winery produces labels that are consistently excellent in quality and true to their terroir. Artificial interventions during vinification are kept to a minimum; the winemaking process aims to achieve both the utmost purity of expression and complex elegance in terms of flavor and aroma.

The wines leaving the Paolo Scavino cellar are extraordinary in every respect. Indeed, for years they have garnered consistent acclaim from both national and international wine critics.

The Vineyard

Cannubi is arguably the most historic vineyard in the entire Barolo area, located in the village of Barolo itself. Paolo Scavino has been producing wine from this *cru*—one of its two oldest vineyard sites—since 1985. The vines were planted in 1946 along the central ridge of the Cannubi hill.

Maceration and fermentation take place in temperature-controlled stainless steel tanks using indigenous yeasts, followed by malolactic fermentation in oak barrels.

Aged for 12 months in stainless steel, 10 months in French barriques, and 14 months in large oak casks, followed by 10 months in the bottle.
