DOM PERIGNON Champagne 2015
DOM PERIGNON
According to English scholar Laurence Venn, Dom Pérignon was the first champagne defined as “prestige.” The first harvest dates back to 1921, but the product was only released and sold to the public in 1936, following the Great Depression. Dom Pérignon is produced exclusively during the best vintage years, and the grapes used are harvested in the same year, unlike other types of champagne.
CHAMPAGNE BRUT
Dom Pérignon creates only Vintage Champagnes, crafted from the finest grapes selected in a single year.
It never stops reinventing itself to always best interpret the exclusive character of each season. It refuses compromises, forgoing the creation of a Vintage when the harvest does not meet its standards.
After at least eight years of elaboration, the wine reaches a perfect balance, the Maison’s finest promise. This is Dom Pérignon Vintage, the Plénitude of Harmony.
2015 Vintage
After a mild winter, 2015 was characterized by numerous contrasts: a freezing spring was followed by a prolonged heatwave from mid-May to mid-August, with exceptional sunshine and periods of drought. Saving rains in late August allowed for optimal ripening, revealing generous and well-balanced berries.
Vinification and aging
The vinification process at Dom Pérignon scrupulously respects the principles of the méthode champenoise, with an absolute commitment to the faithful representation of the vintage. Prolonged aging in the cellar, a rest period that far exceeds appellation standards, allows the champagne to develop its aromatic complexity and depth.
Assemblage
This exceptional champagne is the result of a secret assemblage of Chardonnay and Pinot Noir.
