CHRISTOPHE PAUCHARD
Christophe Pauchard’s estate is situated in the charming little village of Cirey, just outside Nolay in the heart of the Hautes-Côtes de Beaune.
The property has developed gradually over the years and today we cultivate an area of 10 hectares.
The Domaine de la Confrérie was established in 1991 (one of our parcelles or plots is called La Confrérie).
Prior to this date, the estate focused on the “Hautes-Côtes de Beaune” appellation, but since then it has expanded to include Meursault, Meursault premier cru (white wines) and Volnay Santenots premier cru (reds).
MEURSAULT
Its aromatic power and exceptional balance based on fatness and acidity make this one of the great Burgundy wines. This long and structured wine needs time to reach its full splendour. It enhances without dominating dishes of distinction (fish or white meat) and makes an excellent accompaniment to foie gras.
Plot selection: clay and limestone.
Service: between 10° to 13° C
-Vinification and maturing-
Manual harvesting. Traditional fermentation. Aging 12 months in oak barrels. Bottling at the Domaine.
-Tasting notes-
- Color: Pale yellow color and limpid.
- Bouquet: The nose is aromatic, fruity and rich. The nose is fine and elegant. It reveals notes of juicy white peach and slightly fresh lemon associated with small touches of racy minerality, a hint of tangerine, a very discreet floral hint and almost imperceptibly in the background you can hear the toast.
- Taste: on the palate this wine is fruity, balanced and offers a juicy, savory structure… Notes of lemon are recognizable but also of white peach, peach blossom, hints of fresh mandarin, a subtle hint of juicy quenette and a hint of very discreet toast.
