Champagne Millésime made from Chardonnay (80%) and Pinot Noir (20%).
Alcoholic fermentation takes place exclusively in 220L wooden casks. After 2 months of batonnage the champagne is bottled with no filtration. Dosage 8 gr.
The nose is light, balanced in the mouth, with fresh aromas of citrus and flowers.
Ready “to uncork” from the start, it fits perfectly to a rest in the bottle for a few years.
Serving suggestion: as an aperitif or with appetizers of seafood and fish. Try it with salmon tartar with asparagus.
Champagne with a provenance unique of the “Mont de Bon” vineyard implanted between the sixties and the seventies on a soil with a high clay content.
