Cervaro Della Sala Marchesi Antinori Magnum 2001
Castello della Sala
The splendid “Castello della Sala”, the prestigious Umbrian estate of the Antinori Family, rises on a promontory of the Umbro Appennine. A place of unbelievable beauty and charm. For decades, it is the heart of the production of the best white wines with Antinori plates.
In the spring of 1979, Renzo Cotarella, a young agronomist who will produce the wines of the estate in less than ten years, arrived at the Castle. In those years, he soon began to work on an ambitious varietal regeneration project. This was aimed at obtaining white wines with a greater personality than those produced in the Orvieto Classico area. He worked on chardonnay and he deepened his knowledge of Grechetto.
The Cervaro della Sala was born in 1985, one of the most famous and appreciated Italian wines in the world.
Vintage
The beginning of spring saw a good amount of rain and slighty higher temperatures than the seasonal average, which favored a slight anticipation of the budding phase.
In the following period, average temperatures and rainfall led to excellent flowering and vegetative cycle.
Rains at the beginning of summer maintained a good plant growth equilibrium which lasted throughout the month of August. Notwithstanding the high day temperatures, nights were cool and assured the full ripening of all grape varieties. As a result, the ripening of the grapes proceeded optimally, guaranteeing the presumption of an excellent harvest.
Vinification
The grapes come from 14-18 year old vines planted at Antinori’s #Castello della Sala#, at elevations ranging between 200 and 400 metres (656 and 1,312 feet), in Pliocene sedimentary soils rich in marine fossils with some clay. The grapes were harvested and immediately placed in special refrigerated conveyer equipment to ensure that the grapes would be cool on arrival at the press. The grape varieties were vinified separately. In order to maximise the wine’s aromas, the musts remained in contact with the skins for about 8 hours at 10°C. Afterwards the musts were transferred to new French oak 225 liter barrels (Alliers and Troncais) where alcoholic fermentation took place over a period of 15 days. The wine remained on the lees (sur lie) in the barriques for about 5 months, during which time it completed its malolactic fermentation. It was then racked, blended, bottled, and remained a further 10 months in the bottle in the historic cellars of Castello della Sala before being released.
