The Elvio Cogno Winery produces the principle wines of the Langhe. The winery owns about fifteen hectares of vineyard property in Novello, one of eleven townships in the province of Cuneo in which Barolo DOCG production is allowed.
Today Nadia Cogno and Valter Fissore direct the winery with four generations of winemakers and vine growers, dedicated to obtaining excellence that begins with the unique terroir
Ravera is the most well-known cru, or zone of vineyards, of Novello. It is recognized for producing wines that are able to withstand time while maintaining their aromas and freshness intact.
Elvio Cogno proceeded with vineyard management with this mindset, emphasizing the idea that true progress in the enological field coincides with agriculture and organic practices, believing that methods and interventions should be practiced in full respect of the environment, humans, and workers.
The winery began the conversion towards organic production several years ago for practices that will be followed once European certification is obtained.
In addition to certification, the winery ensures a healthy vineyard ecosystem and environmental biodiversity by eliminating synthetic treatments and fertilizers in the vineyards and the use of chemicals and invasive practices in the cellars.

Wine making: in stainless steel, temperature-controlled, automatic pumping-over, post-fermentation maceration for 20 days with submerged cap
Aging: 12-14 months in large Slavonian oak barrels
Profilo Sensoriale
Ruby red in color with light garnet highlights. Great finesse on the nose, harmonious and complex. Sensations of ripe red fruit and violet, with spicy undertones. Enveloping tannins, great elegance, sapidity and persistence on the palate.
Serving suggestions: fresh pasta with light sauces or better Langhe white truffle, rabbit stew and roasted white meat, veil raw tartare, soft cheeses.
Serving temperature: 16-18°C

Our production range is rounded off by this great expression of the Nebbiolo grape. Like Cogno’s other wines, this Barbaresco is elegant and structured, with a fiercely independent character. This isn’t a Barbaresco that wants to mimic its cousin Barolo, but a wine that demands respect for its full, strong identity, from vineyard to cellar. This is the wager of a Barolo producer going against the stream, grabbing the chance to come to terms with a historical wine, a supreme expression of the Langhe hills. Barbaresco Bordi is born thanks to an extremely valuable collaboration with a friend and producer in Neive., which helped the Cogno family to embark on this new adventure.
