SAN MICHELE APPIANO
For over a century, the San Michele Appiano Winery has dominated the heart of South Tyrol’s most important wine-growing municipality with its elegant and stately profile. The lands surrounding the town at the gates of Bolzano, where wine has been at home for over 2,000 years, possess ideal characteristics for the production of great grapes, which are then carefully transformed by the San Michele Appiano Winery.
The San Michele Appiano Winery was founded in 1907 and today brings together approximately 330 wine-growing families who form its backbone.
”RESPECT FOR THE GRAPE“
The transformation of the grapes takes place in the cellar. This is a process of refinement that, while respecting tradition, is combined here with innovative winemaking techniques. “Respect for the grape” is the supreme rule, and nothing is more important than paying attention to the particularities of individual crus and different varieties, enhancing them. Excellent and fully ripe grapes are the indispensable prerequisite for the production of fine wines.
These are vinified strictly separately by individual cru, or vineyard, and by quality level. Indeed, it is only through individual vinification that it is possible to enhance every single terroir. The wine is then aged in steel or wooden barrels until it reaches full maturity.
PINOT GRIGIO SANCT VALENTIN
Sanct Valentin Pinot Grigio was born in 1986, when—by making the first blend selections from various vineyards—it was vinified as a varietal and aged in small barrels for the first time. The expressive Sanct Valentin Pinot Grigio impresses with its perfect integration of acidity, power, and concentration. It is one of Italy’s most gifted Pinot Grigios and offers excellent drinking even after many years of aging.
VINIFICATION
Fermentation, malolactic fermentation, and aging on the lees in barrique-tonneaux. Blending takes place after nearly a year, followed by further aging for at least 6 months in steel vats.
PAIRING SUGGESTIONS
A truly multifaceted talent capable of easily accompanying fish dishes as well as red meats; it is perfect with herb pesto risotto.
