The Story
- For four generations, the Ca’ del Baio estate has been a family affair, as is tradition in the Langhe.
From father to son, the Grasso family has preserved their vineyards, expanded over time through marriages and acquisitions.
At a point where the territories of the municipalities of Barbaresco, Neive and Treiso meet stands the winery, today managed by sisters Paola, Valentina and Federica together with their father Giulio, always present in the vineyard. Among the most important names in the Barbaresco world over the last twenty years, Ca’ del Baio is now a solid reality that, in addition to being able to count on highly prestigious vineyards within the appellation, has had the foresight to look beyond its borders to grow even further. In Barbaresco are the Asili and Pora vineyards, while in Treiso are located Vallegrande, Marcarini and Ferrere: quality seems almost a natural consequence of their value, their variety and low yields. But Giulio and his daughters add the ability to experiment with judgment.
The partial maceration on the stems of the super cru Asili provides, for example, a surplus of freshness to a wine that becomes difficult to resist.
Asili
Asili is a Menzione located in the municipality of Barbaresco, with a medium extension and varying altitudes ranging between 210 and 290 m above sea level.
The delimitation has identified its location all around the eponymous hilltop, thus benefiting from various exposures more or less suitable for viticulture
Organoleptic Characteristics
- brilliant garnet red color with slight ochre nuances
- intense bouquet, with hints of lavender, pine, rose petals, notes of aromatic herbs, spices, and goudron
- enveloping and vibrant flavor, supported by an integrated and non-invasive tannic texture.
Pairings
- pairs well with red meats, braised and stewed dishes, game and aged cheeses.
- the pairing with chocolate is particularly distinctive.
Storage
- Naturally ready to enjoy as soon as it reaches the market,
- particularly if enjoyed after 15-20 years.
- Finally, it is recommended to store the bottle on its side, away from intense light
