The company

Founded in 1973 dall’enotecnico Birello Carlo is located in Cortemilia, a small village in the heart of the Langhe halfway between the Piedmont Alps and the Ligurian Sea.

The plant is spread over an area of approximately 2000 square meters where are distinguished different premises for the various stages of production; but the heart of the company is the laboratory.

Here the expert work of grandfather Carlo hand through accurate infusions, wise and careful mixing filtrations gives life to all the products.

Over the years the company has taken steps to continuous improvements of premises and equipment, not only to conform to current standards in terms of hygiene and operational procedures, but also to keep young and dynamic work environment, in order to satisfy a growing market demanding and constantly evolving.

Still it remains a family business, where they operate together with founder Charles, his wife Maria Rosa, his daughter Francesca and two precious and irreplaceable collaborators Franco and Franca.

The process by which life takes Grappa is painstaking and complex. The start is the search for the best ingredients, so the skins, which come exclusively from the area of the Langhe and Roero close. The fresh pomace is immediately initiated at a realized distillation, this to capture the maximum of the perfumes and aromas of the harvest.

The Grappa thus obtained is then left to age longer in Slavonian oak, a procedure which gives softness and further enriched in aromas and complexity.
