Giovanni Canonica’s farm is the antithesis of rhetoric but promises stability and substance, announcing sincere, spontaneous wines, never mediated by the artifices of wine. Less than three hectares of vineyards, along the slope of the town of Paiagallo; a few meters from the heart of the town of Barolo, in the province of Cuneo; almost entirely cultivated with nebbiolo, with the exception of a scrub of Barbera vines. A vineyard faces south-east, about 350 meters above sea level.
- No official certification: in the Giovanni Canonica vineyard it does not weed, it does not use synthetic products, but only copper and sulfur, according to the winemaking tradition of the past.
- Not only preserving old habits: a “strong” choice, in the Langa where the monoculture of the vine has often brought about upheavals of the landscape and agricultural techniques.
