DOMAINE SYLVAIN MOSNIER Chablis 2022

Located at the northern gates of Burgundy, between Paris and Beaune, the Domaine Mosnier estate is located in the heart of Chablis, with typical terroirs and climates, which allow it to produce unique and incomparable dry white wines.

This characteristic minerality of Chablis wines comes from Chardonnay which draws its strength and delicate freshness from the Kimmeridgian soil that appeared 70 million years ago, when the sea retreated, leaving a legacy of an alternating layer of limestone and clay with fossilized marine organisms.

Since 1893, inspired by the same desire and the same conviction to always do well, several generations of winemakers have followed one another and have applied themselves with strength and determination to the processing of the vines, and to the production of wines in pure Burgundian and Chablisienne tradition and authenticity.

The new generation of Domaine Mosnier, embodied by Stéphanie, combines tradition and modernity in production. The company today manages almost 19 hectares of vineyards distributed across 3 denominations and different terroirs: 4 hectares of Petit Chablis, 13.30 hectares of Chablis and 1.60 hectares of Premier Cru

The estate is under sustainable cultivation labeled HVE 3: minimal use of plant protection products thanks to the cultivation of the soil and the grassing of the plots. The vineyard is more natural, a habitat for numerous insects, a sign of life and biodiversity.

CHABLIS

In pure tradition, the company’s Chablis are vinified in steel containers to enhance the freshest varietal, fruity, floral and vegetal notes. And above all the purity of that particular mineral accent that recalls the flint typical of clay-limestone soils.

-Tasting notes-

Colour: beautiful straw yellow color with evident greenish reflections.

Perfume: expresses a very fresh, lively and mineral nose; we find flint, apple and pineapple; white plum and grapefruit.

Taste: on the palate, its aromas maintain their freshness for a long time. Long and happy persistence up to a sweet and serene gravity. Very fresh, sometimes sharp in the first years, the chablis reaches a perfect balance after a fair amount of evolution.
