Bollinger Champagne is first of all a great wine. It all begins with the vines, and with the pursuit of excellence in the selection of soils. With 163 hectares, Champagne Bollinger exploits its vineyards at more than 60% every year, a situation certainly exceptional in Champagne, and this is what guarantees the qualitative consistency of the style. The same requirement extends to the selection of vineyards. Bollinger supplies more than 80% of Grand and Premier Cru, which make up only 20% of the vineyards of the appellation. The quality of the selected grapes justifies the fact that Bollinger uses only the first pressing at the time of harvest: another exception in Champagne.

-The Estate-
Timeless and mythical, the Champagne House Bollinger, nicknamed “Boll” for the Champenois or “Boly” for the English, is part of the small circle of the very large houses of Champagne. The style of Champagne Bollinger is defined by the exemplary precision brought to each moment of the elaboration. Respect for tradition, hand riddling of bottles, corking of reserve magnum bottles, the last remaining cooper in the Champagne region, this taste for excellence symbolises the entire culture of Champagne Bollinger. More than an art, it is a heritage.
-The vineyard 2015 –
The 2015 Grande Année is sourced from 21 exceptional crus in the Côte des Blancs and Montagne de Reims. The Pinot Noir is primarily from Aÿ and Verzenay, while the Chardonnays that complete the blend come primarily from Le Mesnil-sur-Oger and Oiry.
-The 2015 Vintage-
Fermentation is entirely in barrels. Remuage and disgorgement are done by hand.
Maturation is under cork, with a cellar ageing time more than twice the Appellation regulations. Dosage: 8 g/l.
A golden yellow color, a sign of the wine’s maturity but also of Bollinger’s winemaking methods. The nose initially reveals notes of stone fruit, accompanied by apple, plum, and mirabelle plum, along with a hint of honey. Aromas of blackberry, blackcurrant, cherry, and raspberry then emerge: a veritable dance of red fruits mingled with hints of almond. The finish reveals an exotic touch of mango, combined with hints of vanilla and fine oak.
Serving temperature: Serve between 8°C and 10°C.
On the palate, the attack is fleshy and full-bodied: the mouth fills with aromas of mirabelle plum jam. The palate is characterized by a beautiful texture and great richness. The finish combines notes of chocolate and citrus, with a touch of acidity and a hint of schist. A Champagne of great generosity.
