The age of the vines suggests the Rivetti family&#8217;s production philosophy, which prioritizes the quality of the fruit over quantity and the enhancement of old vines. No pesticides or herbicides are used in the vineyard for sustainable agriculture. The harvest takes place between late September and early October, with careful sorting of the grapes. Alcoholic fermentation lasts 6-7 days in temperature-controlled roto-fermenters, while malolactic fermentation is carried out in small French oak barrels. Aging takes place for 18 months in entirely new barriques with a medium toast.
