The Sottimano winery has always placed sound agriculture at the heart of its modus operandi<\/em>. For several years, it has come full circle with increasingly pure and authentic wines, worthy ambassadors of a special land.<\/p>\n Andrea Sottimano inherited an extraordinary agricultural sensitivity from his father Rino, who has always been tireless in his work among the vines. Behind the scenes, but equally fundamental, is the meticulous work of Elena and Claudia, Andrea’s sisters. Rino never fell into the trap of the pesticide industry’s false promises: here, they have always worked hard with copper, sulfur, a hoe, and plenty of sweat. Today, fortunately, there are less strenuous and increasingly low-impact solutions that Andrea continues to research and apply\u2014the best possible way to enhance and preserve a truly sublime and diverse heritage of crus.<\/p>\n Its terroir and high altitude give the wine spicy notes, as well as great complexity. The Langhe DOC Nebbiolo is fresh and vibrant. Sweet floral and red fruit notes are at the heart of its structure, together with rose petal notes. On the palate we find mint and liquorice, even more persistent towards the finish.<\/p>\n After careful selection of the grapes, alcoholic fermentation occurs spontaneously. Maceration on the skins is followed by spontaneous malolactic fermentation. Ageing takes place in barrel.<\/p>\n Endowed with great structure and silky, enveloping tannins; warm and elegant, it closes with a finish that recalls the balsamic tones typical of the municipality of Neive, its terroir of origin.<\/p>\n Ideal with meat dishes, game, aged cheeses and flavourful first courses, it also pairs perfectly with traditional Piedmontese cuisine.<\/p>\n <\/p>\n","protected":false},"excerpt":{"rendered":" SOTTIMANO Langhe Nebbiolo 2024 AZ.
