THE WINERY – CA’ DEL BAIO\u00a0<\/a><\/h2>\n

For four generations Ca\u2019 del Baio has been a family affair, as is the tradition in the Langhe.<\/p>\n

Nurtured and passed down from father to son, the vineyards surrounding the Grasso family farmhouse have been added to over time through marriage and acquisitions.<\/p>\n

Today it is Giulio and Luciana who, together with their daughters Paola, Valentina and Federica, handle all the various areas of the business with passion and expertise, from the growing and vinification of the grapes, to hospitality and wine sales.<\/p>\n

For the Grasso family, simplicity, a sense of sacrifice and the deep attachment they have to their land are pre-requisites for guaranteeing wines of quality.<\/p>\n

Today the Ca\u2019 del Baio estate takes in 25 hectares of vineyards in the villages of Barbaresco and Treiso, both of which are in the Barbaresco winegrowing area.<\/p>\n

All estate-grown, their wines are made from a range of highly valued varieties, some typical of the area while others are more international: the whites include Moscato, Chardonnay and Riesling, and the reds Nebbiolo, Barbera and Dolcetto.<\/p>\n

Almost all the wines are varietals.<\/p>\n

BARBARESCO<\/a> VALLEGRANDE<\/h2>\n

Our most traditional-style Barbaresco is grown on the vineyards that surround the winery, and is aged \u2013 as in the past \u2013 only in big casks. It represents the elegance of Barbaresco at its very best, without flaunting the muscle of Nebbiolo.<\/p>\n

– VINIFICATION AND AGEING –<\/h3>\n

traditional stem-free on-the-skins fermentation for 7 to 15 days in steel at a controlled temperature. The wine matures for 24 months in casks made of Slavonian oak, and is then cellared for 6 months in the bottle prior to release.<\/p>\n

– TASTING PROPERTIES –<\/h3>\n

colour garnet red; nose intense, with powerful fruit, dried flowers and underbrush; taste dry, smooth and rounded, ending in a warm finish with nicely-balanced tannins.<\/p>\n

– PAIRINGS –<\/h3>\n

a natural match for roast and terrine meats, mature cheeses and fondues, meat and vegetable soups.
