Since 1984, the Castello Romitorio winery has been committed to the study, exploration and promotion of Brunello di Montalcino wine. This has been possible thanks to the work of Italian artist Sandro Chia, and his bond with Franco Martini, a Brunello di Montalcino expert and the cellar master of Castello Romitorio. This bond now continues between Sandro\u2019s son Filippo and Franco\u2019s son Stefano, the next generation.<\/p>\n

The Castello Romitorio Brunello di Montalcino is our flagship wine and reflects more than 30 years of working in harmony with nature within the terroir of Montalcino.<\/div>\n
\n

It is a wine that expresses the Montalcino territory with purity and embodies the finest aspects o f the area\u2019s longstanding tradition of cultivating world class Sangiovese.<\/p>\n<\/div>\n

\n

Fermentation<\/strong> takes place in stainless steel tanks with an initial short period of cold maceration (below 20\u00b0C) on the skins for about 15-20 hours. This is followed by up to 20 days of maceration<\/strong> at a higher controlled temperature. Malolactic fermentation that is naturally caused then lasts for about 10 days, before the wine is rested to separate the lees.<\/p>\n

The wine matures<\/strong> in oak for approximately 24 months, and after bottling the wine is aged in Castello Romitorio\u2019s temperature-controlled cellars for approximately an additional 12 months before release.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/section>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n
