\u201cWe consider our farm an organic business although we have not been certified yet; we are participating, however, to the European project that encourages sustainable farming and we follow agricultural practices passed on for generations.”<\/p>\n

The Fenocchio company also says “We will combine the newly purchased vineyards with those from our family heritage to craft a quality wine that best represents its territory of origin, which we aim to protect in any possible way.<\/p>\n

Vinification<\/strong>:<\/em> Traditional method of long maceration: natural fermentation without added yeasts until 40 days in stainless steel tanks<\/div>\n
Ageing<\/strong>:<\/em> 6 months in stainless steel tanks, 30 months in large capacity Slavonian oak casks (35-50 hl) and a successive maturation in the bottle<\/div>\n

The color<\/strong> is a deep garnet red with ruby reflections, with a bright and lively aspect. The scent<\/strong> is complex and rich with fruit, floral scents, spices, underbrush and plums. It has an intense flavor<\/strong> with sweet tannins and a long aftertaste. The Barolo Castellero expresses itself with its characteristic stimulating scent accompanied by a dry, but warm and elegant flavor which it retains for a long time<\/div>\n
