THE WINERY – CA’ DEL BAIO\u00a0<\/a><\/h2>\n

For four generations Ca\u2019 del Baio has been a family affair, as is the tradition in the Langhe.<\/p>\n

Nurtured and passed down from father to son, the vineyards surrounding the Grasso family farmhouse have been added to over time through marriage and acquisitions.<\/p>\n

Today it is Giulio and Luciana who, together with their daughters Paola, Valentina and Federica, handle all the various areas of the business with passion and expertise, from the growing and vinification of the grapes, to hospitality and wine sales.<\/p>\n

For the Grasso family, simplicity, a sense of sacrifice and the deep attachment they have to their land are pre-requisites for guaranteeing wines of quality.<\/p>\n

Today the Ca\u2019 del Baio estate takes in 25 hectares of vineyards in the villages of Barbaresco and Treiso, both of which are in the Barbaresco winegrowing area.<\/p>\n

All estate-grown, their wines are made from a range of highly valued varieties, some typical of the area while others are more international: the whites include Moscato, Chardonnay and Riesling, and the reds Nebbiolo, Barbera and Dolcetto.<\/p>\n

Almost all the wines are varietals.<\/p>\n

LANGHE DOC RIESLING 2020<\/h2>\n

The family\u2019s passion for Riesling has finally come to fruition in this wine produced for the first time in Ca\u2019 del Baio\u2019s history. Grown on the coolest, breeziest slopes, it manages to convey the noblest qualities of the terroir of the Langa.<\/p>\n

-VINIFICATION AND AGEING-<\/h3>\n

gentle pressing of the grapes is followed by alcoholic fermentation in stainless steel at a temperature of around 16\u00b0C. The wine does not undergo malolactic fermentation, and matures in the tank with stirring sur lie for 12 months prior to bottling.<\/p>\n

– TASTING PROPERTIES –<\/h3>\n

colour<\/strong>\u00a0straw yellow with greenish highlights;\u00a0nose<\/strong>\u00a0intense and aromatic, with fruity notes showing pineapple and mango, and just the slightest hint of hydrocarbon;\u00a0taste<\/strong>\u00a0dry, delicate, elegant, showing well-balanced acid\/alcohol.<\/p>\n

its fine, clean taste means it is at its very best served with light starters, oven-baked fish, snails and fresh cheese.
