THE WINERY – CA’ DEL BAIO\u00a0<\/a><\/h2>\n

For four generations Ca\u2019 del Baio has been a family affair, as is the tradition in the Langhe.<\/p>\n

Nurtured and passed down from father to son, the vineyards surrounding the Grasso family farmhouse have been added to over time through marriage and acquisitions.<\/p>\n

Today it is Giulio and Luciana who, together with their daughters Paola, Valentina and Federica, handle all the various areas of the business with passion and expertise, from the growing and vinification of the grapes, to hospitality and wine sales.<\/p>\n

For the Grasso family, simplicity, a sense of sacrifice and the deep attachment they have to their land are pre-requisites for guaranteeing wines of quality.<\/p>\n

Today the Ca\u2019 del Baio estate takes in 25 hectares of vineyards in the villages of Barbaresco and Treiso, both of which are in the Barbaresco winegrowing area.<\/p>\n

All estate-grown, their wines are made from a range of highly valued varieties, some typical of the area while others are more international: the whites include Moscato, Chardonnay and Riesling, and the reds Nebbiolo, Barbera and Dolcetto.<\/p>\n

Almost all the wines are varietals.<\/p>\n

BARBARESCO<\/a> PORA<\/h2>\n

A wine conceived almost as a challenge, made from one of the most extensive, historic crus in the Barbaresco wine-growing area and one of the most long-lasting. Greeted with acclaim as soon as it was vinified separately for the first time in 2004.<\/p>\n

– VINIFICATION AND AGEING –<\/h3>\n

the destemmed grapes ferment on the skins in heat-controlled steel tanks for 7 to 15 days. The ageing then takes place in third-fill barriques for 24 months, followed by 10 months in the bottle before the wine is released onto the market a year later.<\/p>\n

– TASTING PROPERTIES –<\/h3>\n

colour bright garnet red; nose intense and complex, with fruity overtones conjuring up plums and blackberries, and spicy hints of vanilla and roasted hazelnuts; taste full-bodied, soft and tannic; a big, yet very flavoursome wine.<\/p>\n

– PAIRINGS –<\/h3>\n

a great match for braised and baked red meats and game, and mature cheeses. Does not fail to impress either with chocolate when mature.

– STORING –<\/h3>\n
