GIACOMO FENOCCHIO<\/a><\/h2>\n

\u201cWe consider our farm an organic business although we have not been certified yet; we are participating, however, to the European project that encourages sustainable farming and we follow agricultural practices passed on for generations.<\/p>\n

We will combine the newly purchased vineyards with those from our family heritage to craft a quality wine that best represents its territory of origin, which we aim to protect in any possible way.<\/p>\n

What has given consistency and shaped our family farming business for generations is the respect for the work of our forefathers and the willingness to continue this tradition.\u201d<\/p>\n

BAROLO<\/a> DOCG<\/h2>\n

Exposure:<\/em> East
\nAltimetry:<\/em> Hilly zone at around 350 meters a.s.l.
\nSoil:<\/em> Helvetian, with sand, clay and calcareous marl
\nAge of the vineyards:<\/em> 20 years
\nHarvest:<\/em> In the beginning of October
\nProduction:<\/em> 7000 bottles a year<\/p>\n

-Vinification and ageing-<\/h3>\n

Vinification:<\/em> Traditional method of long maceration: natural fermentation without added yeasts until 40 days in stainless steel tanks
\nAgeing<\/em>: 6 months in stainless steel tanks, 30 months in large capacity Slavonian oak casks (25-35 hl) and a successive refinement in the bottle<\/p>\n

Dep rubin red color with lively, bright bighlights softened by slight traces of purple. It has an intense, ethereal bouques, with the bitterish flavour of liquorice, witered roses and tarm alongside beady, warm and spicy aromas<\/div>\n

-Matching-<\/h3>\n
