In 1761 Bartolomeo Borgogno establishes the winery.<\/p>\n
Cesare Borgogno takes over management of the winery, changing its fortunes. He begins exporting the wines abroad, to Argentina, Europe and the United States. He has the great intuition to forget half of the production of Barolo Riserva in the cellar, selling it only twenty years later.<\/p>\n
In 2008 the Farinetti family acquires the winery, firmly committed to strictly following traditions. In 2010, Andrea Farinetti, after graduating from the oenological school in Alba, takes over the company\u2019s leadership as heir to the Boschis family\u2019s legacy.<\/p>\n
A couple of big changes occur: the beginning of the conversion to organic practices, and the purchase of 3 ha of vineyards in the Tortona area for the production of Timorasso.<\/p>\n
In 2016\u00a0Borgogno begin an important renovation of the historical cellars in Barolo, restoring old concrete fermenters and refurbishing other production facilities. Furthermore, 11 ha of vineyards in one of the best locations near Alba, Madonna di Como, are added to the existing 20 ha owned by Borgogno.<\/p>\n
In the vintages where the weather permits, we select the best grapes from our three most important Cru: Cannubi, Liste and Fossati. Spontaneous fermentation in cement tanks at low temperatures) followed by a submerged cap maceration which, in some cases, could even reach 50 days. Aging in big barrels in Slavonian oak for six years followed by six months of aging in bottle before being released on the market.<\/p>\n
Regular fermentation for about 18 days at controlled temperature (at first 22-25 \u00b0 C and at the end 29-30 \u00b0 C), followed by submerged cap maceration for 50 days with a stable temperature of 29 \u00b0 C. After the racking off started the malolactic fermentation and it lasted 15 days at 22 \u00b0 C. Ageing: six years in Slavonia oak casks (4500 l) with a further refining in bottle for 1 year.<\/p>\n
