The splendid “Castello della Sala”, the prestigious Umbrian estate of the Antinori Family, rises on a promontory of the Umbro Appennine. A place of unbelievable beauty and charm. For decades, it is the heart of the production of the best white wines with Antinori plates.<\/span><\/p>\n

In the spring of 1979, Renzo Cotarella, a young agronomist who will produce the wines of the estate in less than ten years, arrived at the Castle. In those years, he soon began to work on an ambitious varietal regeneration project. This was aimed at obtaining white wines with a greater personality than those produced in the Orvieto Classico area. He worked on chardonnay and he deepened his knowledge of Grechetto.

The Cervaro della Sala was born in 1985, one of the most famous and appreciated Italian wines in the world.<\/span><\/p>\n

2017 was, on the whole, a dry year with a winter characterized by an absence of rainfall and temperatures which were below seasonal averages. A late frost, which struck particularly hard low-laying vineyard plots during the month of April caused a loss of grape production. The warm and dry weather of the summer months favored an early ripening but guaranteed as well a very healthy crop. Drip irrigation was utilized to combat the scarcity of water which occurred in certain vineyard parcels. The harvest took place with the picking of healthy grapes, capable of producing a wine with a notably positive balance between acidity and alcohol. The picking of the Chardonnay to be utilized for Cervaro della Sala began at the end of the second week of the month of August while the Grechetto was harvested during the first days of the month of September.<\/p>\n<\/div>\n<\/article>\n<\/section>\n

The grapes were picked during the earliest hours of the morning to order to assure that the grapes which reached the cellars were entirely whole and healthy, not stressed by high daytime temperatures. After a brief four hour period of skin contact at 50\u00b0 Fahrenheit (10\u00b0 centigrade) the must went into stainless steel tanks before going into oak barrels. Both the primary and the malolactic fermentation took place in barrel. After approximately three months the Chardonnay went back into the stainless steel tanks to be blended with Grechetto (which had been fermented separately in stainless steel). After bottling, the wine was aged in bottle for several months in the historic cellars of the Castello della Sala before commercial release.<\/p>\n

The 2017 vintage, characterized by a generally warm climate, nonetheless maintains the freshness and the typical Mediterranean style of Cervaro della Sala. The nose offers perceptible notes of chamomile and flint. With the characteristic and delicate sensations of vanilla on the palate and butter which meld gracefully into hints of tropical fruit to compose a well-defined bouquet. The wine is still young, but will be able to evolve well for years to come as well.<\/p>\n<\/div>\n<\/article>\n<\/section>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/article>\n<\/section>\n
