Schon immer haben sich die \u201eUnterganzner\u201d mit der Kunst der Kellermeister besch\u00e4ftigt. Beweis daf\u00fcr ist ein gut erhaltenes B\u00fcchlein, dessen Inhalt als vollkommener Unterricht f\u00fcr Kellermeister gedacht war. W\u00e4hrend die Weine fr\u00fcher ausschlie\u00dflich in Holzf\u00e4ssern gelagert und lange vor dem Beginn des zwanzigsten Jahrhunderts auch au\u00dferhalb der Landesgrenzen transportiert wurden, sind die heutigen Keller mit Beton, Stahl und innovativen Techniken ausgestattet. Dennoch spielt das Holzfass nach wie vor eine herausragende Rolle. So werden die hochwertigsten Weine ausschlie\u00dflich im Holzfass gelagert. Durch die bewusst schonende Verarbeitung der Trauben und durch den vorsichtigen Umgang mit dem Endprodukt Wein soll die im Weinberg m\u00fchsam erarbeitete Qualit\u00e4t gef\u00f6rdert und erhalten werden.
